About The Chefs

Executive Chef, Peter Phan

Sous Chef, Laura Alvarado

Over the course of 17+ years, Chef Peter Phan has developed quite the eclectic background.  While attending culinary school at the Art Institute of California, Peter supplemented his education with practical experience at Five Feet Restaurant, a fine-dining French-Asian fusion restaurant in Laguna Beach.  There, Peter learned the importance of not only creating delectable meals but offering aesthetically pleasing presentations as well.

After attending culinary school, Peter worked at Alta Vista Country Club.  There, he continued enhancing his culinary experience while simultaneously embracing the service aspect of the job, a vital component of the restaurant industry.

Ultimately, Peter found his way to becoming the Executive Chef for Nordstrom, working at various locations throughout Southern California, from starting them up (one of the three chefs selected nationwide to commence the Nordstrom Café Bistro in Fashion Island in Newport Beach) to helping them all thrive.  Beyond the exceptional customer service that Nordstrom instills, Nordstrom provided Peter with the foundation for the management experience he demonstrates today.

After Nordstrom, Peter took on even greater responsibility while working as the Executive Chef of SeaCliff Country Club, hosting hundreds of events, from fine dining and multi-course wine dinners to large weddings and tournaments.  Peter’s dedication and creativity, both in plating and in taste, generated the acclaim he received not only among SeaCliff members but in Orange County news as well. Peter also served as the lead chef for the 2014 Rose Bowl and NCAA BCS National Football Championship Tailgate events, providing food to more than 40,000 people.

On a personal level, Peter married his wife, Erica. Together they have 2 daughters Addison and Avery. In their spare time, they enjoy watching movies, traveling, and enjoying the aspects of Peter’s culinary background, from cooking at home to trying eccentric foods on vacation trips such as Napa, Hawaii, and Japan.

Peter has been a part of the world-class Friendly Hills Country Club team for over 2 years and can’t wait to show you what he has planned for the years to come.
Chef Laura first started her venture into the culinary industry at the age of 16, starting a small at home business, Clumzee’s Treats, selling home-made baked goods and custom cakes to local businesses and private clientele.  After graduating high school in 2010, she continued to run Clumzee’s from home while attending The Culinary Arts Institute in Orange County for three years, graduating in 2013.
The first professional kitchen Chef Laura worked in was Pick Up Stix in Huntington Beach in 2011. There, she was hired as a shift manager, learning all aspects of the quick service restaurant from cooking, to customer service, training other employees, and restaurant management.
It was in summer of 2012 that she stepped away from management and interviewed with Executive Chef Peter Phan at Seacliff Country Club and was hired as a cook.  She spent 2 years advancing her culinary skills and techniques working side by side with Chef Peter in all aspects of the kitchen, from large banquet style events, multi-coursed dinners, quick-service and fine dining. She also worked part time at another Orange County Private club, Pacific Club Newport Beach, in their banquet facility and as a line cook, and also with American Golf Corporation as a cook at the 2014 Rose Bowl and NCAA BCS National Football Championship Tailgate events, providing food to more than 40,000 people.
 Chef Peter presented Laura with a Sous Chef opportunity at Seacliff in 2014 and has continued as his Sous Chef at Friendly Hills Country Club. She is also currently a Culinary Consultant for After’s Ice Cream, and still enjoys private catering and dietary meal prepping outside of the Country Club.
Throughout her career, she has grown passionate about modern Latin and Asian Cuisine, while also appreciating and acknowledging her love for baking and desserts. The joy in her career is having the ability to please others and be involved in the fellowship of others over food.  She hopes to be able to continue to learn and grow in her skill every day, while being able to teach and influence others as well.
